Fresh Layered Corn Mexi Salad with Cilantro Lime Dressing
Ingredients Salad:1-2 Cups Organic Corn, if not Fresh get Frozen
¼ Bunch Organic Cilantro
½ Organic Red Onion
½ Organic Red Bell Pepper
1 Organic Avocado
Juice of 2 Organic Limes
1 Organic Green Onion
Pinch of Celtic or Himalayan Sea Salt
Big handful of Organic Fresh Spring Mix or
Ingredients Dressing:½ c Chopped Fresh Cilantro
½ c Oil (olive, flax or hemp)
Juice of 1 Organic Lime
2 tbs. Raw Honey or Agave
1 tsp. Celtic or Himalayan Sea Salt
Pinch of pepper
Directions Dressing:Place all the ingredients in a high speed blender
and blend until smooth.
Directions Salad:Chop all of the ingredients and toss with fresh
lime juice and pinch of sea salt.
Serve over bed of greens.
